CANNONAU DOC ROSÉ WINE

The name means “fiancé” in Sardinian. Amoradore makes reference to the old Dorgali tradition whereby rosé wines used to be drank during wedding receptions and betrothals. Dorgali is the town that - maybe more than others - boasts a tradition in the preparation of rosé wine, "Biancu" in Dorgalese, obtained by drawing off Cannonau red grapes on the first week of September.

Visual examination

The wine boasts a pale pink colour, "onion peel" coppery highlights and is lustrous and limpid.

Olfactory Examination

Its floral aroma of peony roses is followed by fruitier fragrances of white peaches, wild strawberries and clementines. The finish is characterised by a hint of aromatic herbs and mineral notes.

Gustatory examination

The wine is fresh and soft; in addition, it is pleasantly savoury.  The flavour confirms the aroma, especially when it comes to the citrus notes of clementines. Well-balanced, with a good persistence and easy-drinking, it leaves the mouth pleasantly dry, inviting to another sip.

Pairings

It pairs off well with starters featuring medium mature cheeses and cured meats, veal tartare and delicate first courses with fresh cheese creams.

VERMENTINO DI SARDEGNA DOC

Impare is the latest addition to our cellar. The name means "together" in Sardinian and it represents our wish to return to light-heartedness, a celebration of conviviality. Vermentino appeared in our area a few decades ago and has quickly become a favourite with the public.

Visual examination

Impare is limpid and with a straw yellow colour. Its greenish highlights make it very lustrous and with a pleasant appearance.

Olfactory Examination

Floral hints of broom and chamomile flowers accompanied by citrus notes of bergamot orange, Saturn peaches, white plums and pears. Persistent notes of thyme and white pepper. Finish characterized bysmoky notes and a hint of talc.

Gustatory examination

The wine boasts a good full flavour conveyed by a pleasant acidity and supported by an interesting tanginess, which makes it particularly supple.

The aroma is also perceived in the mouth with the addition of exotic fruit, leading to a pleasant finish dominated by marine hints and almondy tones.

The alcohol content is counterbalanced by the body without being invasive. Good persistence.

Pairings

It pairs off well with most fish dishes of the Sardinian tradition as well as with light fried seafood and vegetable platters. Also ideal as an aperitif

Mastros was our starting point, where our experience, experimentations and ambitions started off. Wine masters start from an idea and give it shape, day after day, until the masterpiece is complete. The word "mastros" means master in Sardinian and is dedicated to our grandfather Bachis, our first vine master.

Visual examination

Ruby-red colour, not particularly deep, typical of the variety.

Olfactory Examination

Complex mature aroma. 

Gustatory examination

Good complexity and persistence.
Some tertiary aromas are perceived.
The good acidity and balance make it very interesting.

Pairings

Mastros pairs off well with mixed grill platters or roasts, braised meat and veal or game dishes. It can also be enjoyed with medium or mature cheeses.

Wine-making and processing methods

Our processing method is very simple and linear.

We start with a scrupulous choice of the harvesting period, analysing the grapes for weeks before harvesting and choosing the right moment depending on the variety and the product we want to obtain. We select the best grapes destined to make our wines. We then process them promptly after harvesting.

We use stainless steel tanks that guarantee the maximum hygiene levels and respect varietal characteristics. The monitoring of the fermentation temperature is a standard procedure.

The breaking of the cap and its wetting in must is performed exclusively by hand. We only use free run juice for all our wines.

For white and rosé wines, we proceed with settling after destemming so as to ferment the must free from the lees. No filtering is envisaged and we use as little sulphites as possible with levels well below the threshold allowed for organic productions.

The vineyard

The Iloghe vineyard covers four hectares, more than half of which destined to the production of Cannonau, the leading grape variety in our area, while the rest is destined to local grape varieties and Merlot. Located 180 m asl and facing East, it is characterised by a sandy soil generated by the disintegration of the granite terrain, meaning it is extremely permeable, harsh and ungenerous towards the vines.

Vermentino is cultivated on a granite terrain not far from the cellar. The hours of sunshine and presence of wind predominantly from the South-West mean the main diseases such as downy mildew, oidium and botrytis do not affect our grape bunches, which can be easily managed with three seasonal treatments.

Philosophy

Our main objective has always been wine-making and our bottles reflect our family’s passion and the care we put into our work.

Over the past few decades, we have been able to consider ourselves a rarity among wine-making companies in our territory, as we are not linked to any collateral activity, either leading or non-leading. We were born growing grapes and making wines. This is the “only” thing that we do, and we try to do it well.

We process our grapes with traditional methods with the purpose of obtaining high-quality wines.

Our Cellar is located near the vineyard so as to valorise the grapes and minimise transport problems.

We are located just a short drive from Dorgali, on the Eastern coast of Sardinia. The company is in the Fologhe valley, an area that has always been destined to the cultivation of vines and olives at a crossroads between Barbagia and Baronia.
